Beer Battered French Toast

The first of four delicious recipes created by the team at Stonesedge Kitchen for the 2017 Whistler Village Beer Festival Grimm's Brunch.  This French Toast features Grimm's Farmer Sausage Rounds  creamy brie, and apples sandwiched between 2 thick pieces of brioche and topped with beer syrup and nutella and beer whipped cream. YUM.

Ingredients: 

Beer syrup

16 oz. dark beer
¼ C brown sugar
2 tbsp. butter
¼ C maple syrup

Grimm’s Farmer’s Sausage Round Stuffing

1 Pack Grimm’s Farmer’s Sausage Rounds
4 onions
2 Apples
1 tbsp. balsamic vinegar
Brie Cheese 

Nutella and Beer Whipped Cream

2 tbsp. Nutella
1 Litre 35% whipping cream
1 tbsp. sugar
2 tbsp. beer syrup 

Beer batter                                        

1 tsp ground cinnamon                    
¼ tsp ground nutmeg                       
2 tbsp. sugar                                      
4 eggs                                                 
¼ C of your favorite beer
½ tsp vanilla extract
8 slices of brioche

Preparation: 

Beer Battered French Toast

  1. Boil beer and brown sugar, simmer on low heat 30 minutes.
  2. Remove from heat, add butter and syrup.

Grimm’s Farmer’s Sausage Round Stuffing

  1. Caramelize onions in a small pot,
  2. Add diced Grimm’s Farmer’s Sausage Rounds, balsamic and diced apples.
  3. Cook until apples are nice and soft.

Nutella and Beer Whipped Cream

  1. Whip all ingredients in a bowl until peaks form.

Beer batter

  1. Whisk together cinnamon, nutmeg, sugar, eggs, beer and vanilla. Keep in shallow container.
  2. Dip bread in egg mixture, fry slices until golden brown, then flip and cook the other side. 

Place heaping spoon full of stuffing in between 2 pieces of brioche and add one premium slab of brie cheese.
Serve with beer syrup and Nutella whipped cream.
