Grimm’s Canadian Back Bacon Potato Soup

Ingredients: 
  • 2 medium onions, chopped
  • 4 medium potatoes, peeled and quartered
  • 500ml / 2 cups of vegetable or chicken broth
  • 1 (45ml / 12 ounce) can evaporated milk
  • 100g / 3.5 ounces Grimm’s Canadian Back Bacon
  • 60ml / ¼ cup butter
  • 1.25ml / ¼ tsp salt
  • Pepper to taste
  • 90ml / 1/3 cup minced chives
  • Dollop of sour cream for garnish
Preparation: 
  1. In a large saucepan, sauté onions until tender
  2. Add potatoes and broth. Bring to a boil, reduce heat, cover and simmer for 25 minutes or until potatoes are soft. Set aside 250ml / 1 cup broth mixture
  3. Puree remaining broth mixture in batches in a blender. Return pureed broth to saucepan
  4. Add milk, Grimm’s Canadian Back Bacon, butter, salt, pepper and reserved broth mixture
  5. Heat to hot throughout, but do not boil
  6. Divide into bowls and top each with a dollop of sour cream and chives
