Grimm’s Pastrami Breakfast Hash

Ingredients: 
  • 30ml / 2 Tbsp olive oil, divided
  • 340g / 12 ounces Grimm’s Pastrami, roughly diced
  • 2 medium red bell peppers, diced
  • ½ medium yellow onion, diced
  • 5 medium Yukon Gold potatoes, peeled and roughly diced
  • Salt to taste
  • Ground black pepper to taste
Preparation: 
  1. Heat 15ml / 1 Tbsp oil in a large nonstick frying pan over med-high heat
  2. Add Grimm’s Pastrami, bell peppers and onion. Season with salt & pepper
  3. Cook, stirring occasionally, until peppers and onions soften - about 7 minutes
  4. Remove ingredients from pan and set aside in a medium bowl
  5. Add remaining oil to pan. Add potatoes and season with salt and pepper
  6. Cook, stirring occasionally, until golden brown and tender - about 12 minutes
  7. Add pastrami mixture and cook 4 minutes, or until warmed through
