Reuben with Naturally Fermented Sauerkraut

Who doesn’t love a good Reuben sandwich?  Toasted Rye bread, piled high Pastrami, Swiss Cheese topped with a heaping helping of sauerkraut. Divine.

This is our version of the classic Reuben with a bit of a twist, of course.  We adorned our sandwich with a dose of good-for-you naturally fermented Grimm’s Caraway Sauerkraut.  The raw, unpasteurized sauerkraut packs a bunch of live beneficial bacteria culture that aid in digestion and overall gut health (to find out more about the benefits of naturally fermented foods, click here).    

This simple sandwich is ready in minutes and is great for appetizers using mini rye bread or a quick meal along with a bowl of soup or salad.

Ingredients: 

2 pieces of Rye bread

2 slices Grimm’s Pastrami (available at the deli counter)

1 slice Swiss cheese

1 tbsp Thousand Island dressing

¼ cup Grimm’s Caraway Sauerkraut (drained with juices back in jar)

Preparation: 
  1. Take 2 slices Rye bread, spread Thousand Island dressing on both sides
  2. Add Swiss cheese to one side of the bread, top with Grimm’s Pastrami
  3. Add to frying pan on medium heat, toast and melt the cheese, then remove from pan
  4. Top meat with another dab of Thousand Island Dressing*
  5. Pile on the Caraway Sauerkraut and add the top slice of bread

*By putting the sauerkraut directly on the dressing, it keeps the sauerkraut raw, allowing all of the live beneficial bacteria to flourish.

Top with a slice of Grimm’s Original Pickles (optional).

Variations: Substitute Pastrami for Montreal Style Smoked Beef
